Look up [Constructive Solid Geometry (CSG)][1]. It's what most of those editors use. I don't really know the Unreal editor (just a bit the old UnrealEd from the first Unreal ^^), but i know that Valves Hammer editor (formally Worldcraft) partially uses CSG brushes for some features.
