Editor taking ages to perform tasks, random things breaking

I've been having serious issues with Unity lately. For a while now, it's been running really slowly, taking a long time to perform basic tasks such as creating new folders (within the editor environment), playing a scene, and updating scripts. Sometimes it takes less time than others, but it has taken up to 3 minutes to play a scene before. The game I am working on is still early in development, without anything incredibly complex to be taking up a heavy amount of processing power. Looking online, I've seen people attribute problems like this to RAM constraints... but my current desktop is less than a year old, has 16 GB of RAM and an i5 processor, as well as a nice graphics card.

In addition, some things in the game have started breaking. I had implemented a drag-and-drop inventory system using UI based on a tutorial I watched on YouTube. It was working fine until just recently, when it completely quit working (I hadn't changed anything in the code). Items in the inventory wouldn't even register things such as OnMouseOver. More recently I noticed that my raycast system that I used for player attacks stopped registering collisions with anything.

Unity has been running slowly for a while now, but the other issues started happening when I opened my project on another device (a tablet) that I now think was in another version. I didn't save the project on that device, but when I brought it back over to my desktop, stuff exploded. In addition to the things mentioned above, it added empty scripts to some of my UI elements and got rid of one of the image renderer components.

After some advice from someone with more experience than myself (who said they had at one point had something similar happen, albeit further along in a project), I created prefabs, exported all of my assets, uninstalled unity, then reinstalled it (as 5.2; it was at 5.1 and my collaborator and I decided to consolidate versions for obvious reasons), created a brand new project, and imported the assets over. At first it seemed like it sped up again after doing this, but it quickly slowed back down and the broken mechanics haven't changed.

I'm getting really frustrated, and at this point I am considering deleting everything entirely and starting again from scratch in a new project. I would of course like to avoid this if at all possible. Does anyone have any idea how to fix it, and if not, what exactly I did to cause the issue (so I can avoid it in the future)?
