Compiled Program not showing all Components

I've got a basic camera & basic canvas (Render = screen space, 1920x1080p) my scene works perfectly when running within Unity, however, when I build and run (turning it into a Windows App) some of the components (images/sprites) don't show.

I've tried restarting unity (and compiling on a different system)

I've tried moving the components into a panel duplicated from one that is actually working

I'm now completely stuck and my google fu has failed me, I'm happy to provide any info that would help someone help me - and very happy to accept suggestions on things to check/work on. I just can't figure out why it works in Unity and doesn't when it's compiled.

The parts that isn't showing on build is all the sprites and images. You can see exactly what i mean once the game has selected the next player
