Maintaining and changing model colors

I am looking to maintain a model and adjust it's texture color so I only need to adjust physics and script values on one prefab. I'm looking to have one artist adjust one model/texture so the content pipeline is easier to maintain.

Thanks again for all the help, this should be my last thread for a while.

What is your question? How to change a texture and/or color on a mesh?

Definitely, I assumed I would need to use a shader but I wanted to see input from some people that have done this before.
