Controller Prefab

So I'm pretty new to Unity, but I'm an experienced programmer, and I've heard that Unity can require you to think of things a bit different at times.

I'm trying to create a prefab to control the rendering of sprites to a Render Target, and I noticed you couldn't add cameras etc to a prefab without it having a mesh, so I made a 'marker mesh' as a triangle and added it to the prefab, then removed everything but the transform from the prefab, which seemed to work fine.

My question is if this is going to cause any problems for me, and if there is an easier way to accomplish this. Ideally I'd love to be able to draw sprites to the texture through a C# script, using actual image coordinates but it doesn't seem like there's a way to do that.
